Expo

What is Expo?

Expo is the person or station that checks finished food and sends it out to the guest.

Expo is short for expeditor. In many restaurants, expo is the person at the pass who checks the plates, matches them to the ticket, and sends them out. For example, if a phone order says two garlic naan, chicken tikka masala, and one mango lassi, expo checks that the bag matches the ticket before pickup. This matters for phone orders because the caller is not standing there to catch mistakes. The expo step is where missing sauces, wrong names, or late tickets can still be fixed before the customer leaves. In a small shop, the expo role may be shared by the cook, cashier, or manager, but the job stays the same: make sure the order is right and ready. See Restaurant phone glossary for related terms.
