The pass
What is The pass?
The pass is the counter or shelf where finished food waits before it goes to the guest.
The pass is the handoff spot between the kitchen and the front of house. It is where finished plates, bags, or boxes wait before expo or staff sends them out. In a pizza shop, that might be the shelf where a large pepperoni and a garlic knots order sits until pickup. For phone orders, the pass matters because the order has to move from the phone to the kitchen to the pickup shelf without confusion. If there are three orders ready at once, the pass helps staff separate “John” from “Maria” and keep the right bag with the right ticket. A clean pass setup keeps pickup lines moving and helps the front counter answer, “Your order is almost ready.”
